My Diet Friendly Breakfast Menu

  • Suf you're trying to lose weight, it's a good idea to start your day with a healthy breakfast.  A satisfying meal in the morning will help you to avoid cravings and fatigue later in the day, which often lead to poor food choices or binging.

    So what's a healthy breakfast?  Many typical breakfast foods are high in carbohydrates and sugar.  I prefer a hearty spinach, cheese and onion omelet with fresh fruit. Sound too complicated?  It's not.  Here'snday is my meal planning day.  When I shop, I make sure that I buy fresh berries, spinach, onion and Egg Beaters.  At home, I sauté a half cup of diced onion in a teaspoon of olive oil.  I add the spinach and cook it until it is soft and ready to use.
  • Then I divide the spinach into small single serve packets (I use baggies) and throw them in the freezer so that I can pull one out each day.  I shred Monterey Jack cheese and put it in a resealable bin with a ¼ cup scoop.  I store the cheese in the refrigerator.
  • Each morning, I pull out a packet of spinach and warm it in the microwave.  I prepare my Egg Beater omelet in a non-stick pan so no oil is needed.  I add the spinach and a single scoop of cheese and then finish cooking my omelet in the oven.  While the omelet is in the oven, I wash and slice a cup of fruit.  Then I make a low calorie coffee drink and breakfast is served!
Of course, you can prepare your omelet with any of your favorite ingredients.  The point is to have the ingredients pre-measured and precooked so the omelet is easy to prepare during the week. Bon appetit!
