Crushed tomatoes with Normandy Fromage Frais

Ingredients
500g of tomatoes
250g of Natural Fat Free Normandy Fromage Frais
100ml of Low fat cottage cheese (up to 2% sour cream, quark, or cottage can be used instead)
1 bunch of Tarragon
Juice of 1/2 Lemon
Salt & Pepper

Salt & Pepper
Make a cross-cut on top of each tomato and blanch for 30 seconds in boiling water. Drain. Remove the seeds, dice and let them drain for 20 minutes. In a separate bowl, mix together the Fat Free Fromage Frais with the cottage cheese. Add the lemon juice, the Tarragon & the drained tomatoes. Season with salt & pepper to taste.
